Caramelized Fennel & Onion Pizza

This caramelized fennel and onion pizza is a flavorful twist on traditional pizza, featuring a homemade or store-bought pizza dough as its base. Caramelized Fennel & Onion Pizza

Ingredients
  

  • pizza dough
  • 2 tbsp olive oil extra virgin
  • 1 onion (large) thinly sliced
  • 1 fennel bulb (large) cored and thinly sliced
  • 8 oz mozzarella cheese grated
  • cornmeal
  • salt
  • pepper

Instructions
 

  • Preheat oven to 450°.
  • Heat 2 tablespoons olive oil in a large skillet.
  • Add onion and fennel and cook over medium heat until onions are soft and golden and the fennel is tender, about 15 minutes.
  • Put dough on pizza pan or stone, with a light dusting of cornmeal so it doesn't stick.
  • Lightly brush with olive oil, and poke with a fork so it doesn't bubble.
  • Spread with grated mozzarella, and top with onion and fennel mixture.
  • Season with salt and pepper.
  • Bake until the bottom is lightly golden and the cheese is bubbly and just barely browned.
  • Remove from the oven and transfer to a cutting board. Sprinkle with shaved Parmesan.
  • Let rest for 3 to 5 minutes before slicing and serving.
