Caramelized Fennel & Onion Pizza

Caramelized Fennel & Onion Pizza
Ingredients
- pizza dough
- 2 tbsp olive oil extra virgin
- 1 onion (large) thinly sliced
- 1 fennel bulb (large) cored and thinly sliced
- 8 oz mozzarella cheese grated
- cornmeal
- salt
- pepper
Instructions
- Preheat oven to 450°.
- Heat 2 tablespoons olive oil in a large skillet.
- Add onion and fennel and cook over medium heat until onions are soft and golden and the fennel is tender, about 15 minutes.
- Put dough on pizza pan or stone, with a light dusting of cornmeal so it doesn't stick.
- Lightly brush with olive oil, and poke with a fork so it doesn't bubble.
- Spread with grated mozzarella, and top with onion and fennel mixture.
- Season with salt and pepper.
- Bake until the bottom is lightly golden and the cheese is bubbly and just barely browned.
- Remove from the oven and transfer to a cutting board. Sprinkle with shaved Parmesan.
- Let rest for 3 to 5 minutes before slicing and serving.
