Cacik

Cacik is a refreshing and flavorful yogurt-based dish, akin to Greek tzatziki, enjoyed widely across the Eastern Mediterranean. It’s a cool, creamy blend made with plain yogurt, into which finely chopped cucumber, fresh mint, crushed garlic, and chopped parsley are stirred. The cucumbers are first salted and left to drain, ensuring a crisp texture without excess moisture. This mixture is seasoned with salt and pepper, marrying the tangy yogurt with the aromatic herbs and the subtle, fresh taste of cucumber. Cacik is typically chilled, enhancing its refreshing qualities, and garnished with additional fresh herbs for a burst of color and flavor. It’s versatile in its use, served as a dip with pita bread and marinated olives, or as a soothing accompaniment to meat dishes, such as Kibbe. Ingredients
  

  • 1 cucumber finely chopped
  • 1/4 cup plain yogurt
  • 2 tbsp fresh mint chopped
  • 1 clove garlic crushed
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Layer cucumber in colander with plenty of salt.
  • Leave for 30 minutes.
  • Rinse with cold water and drain thoroughly.
  • Dry with paper towel.
  • Mix together the yogurt, garlic and herbs and season with salt and pepper.
  • Stir in the cucumber.
  • Chill and garnish with fresh herbs.

This refreshing yogurt dish, similar to Greek tzatziki, is served all over the Eastern Mediterranean, with marinated olives and pita bread, or as an accompaniment for meat dishes. Try it with Kibbe.
